Most People Never See This Stage of Coffee

Most people are familiar with coffee as a finished plant.

Clean, glossy foliage. Easy to recognize. Easy to sell.

But before it gets there, it goes through a stage that’s a bit less talked about — and one we think is actually the coolest.

This is coffee right at the beginning.

The seed pushes itself up, and the bean just sits there on top before anything really opens. It takes a bit of patience, but it’s one of those things that’s just interesting to watch — especially once you start seeing it across a full tray.

And then a little later, the first bright green leaves come in.

Same tray, just a couple weeks later.

It’s not the fastest crop, but it’s a steady one — and once it starts moving, it becomes very consistent.

We run all of our coffee through our in-house germination program so we can see how each lot performs.

The variety we’re working with here is Coffea arabica ‘Aztec Gold’ (Oro Azteca).

It’s a more compact selection, which makes it easier to manage in production and a strong fit for container growing and indoor plant programs. It keeps that deep green, clean look people expect from coffee, but in a more controlled, practical size.

We’re really excited about this particular lot. It’s a strong, clean batch, and in our opinion one of the best Coffea arabica selections to work with.
